Health benefits of pumpkin for the entire family
SPRINGFIELD, Mo. (KY3/KSPR) - Many families start the seasonal ritual of picking out and carving their pumpkins this time of year. A Registered Dietitian with the Springfield HyVee said there's a lot more families can do with those pumpkins to benefit the entire family's health.
Amanda Allen said even though people often think of sugary sweets and drinks when they think of pumpkin, that's not the case. Allen said pumpkin can help the body fight off inflammation, is packed full of fiber, and is high in potassium. She also said many people save and roast their own pumpkin seeds, which are high in protein and in magnesium.
Amanda Allen also gave us some general tips for when we look at grocery store labels. "You want to look for ingredients that you can recognize, ingredients that you can pronounce, and overall that's just going to make sure that you're not getting those additives that aren't so great for us," said Allen. "When looking at those labels, ingredients that are short lists and things that you know is ideal."
Amanda Allen also gives viewers a healthy overnight oat recipe below including the super-food.
Overnight Pumpkin Pecan Oatmeal
Ingredients:
1/4 cup pumpkin puree
1/2 cup rolled oats
1 teaspoon cinnamon
1/4 cup almond milk
1 tablespoon + 1 teaspoon maple syrup
1 tablespoon chopped pecans
Directions:
- With a small bowl and a fork, mix together pumpkin, rolled oats, cinnamon, almond milk and 1 tablespoon of the maple syrup.
- Mix until an even consistency is achieved.
- Pour into an airtight container or jar.
- Top with pecans and remaining maple syrup.
- Cover and refrigerate 4-6 hours or overnight.
