How to make Miracle Scones
Makes 10 2-inch scones
Note: If you don’t have self-rising flour, make your own by adding 1½ teaspoons of baking powder and ¼ teaspoon salt per cup of flour.
Ingredients:
2 cups self-rising flour
½ cup whipping cream
½ cup clear soda, such as Sprite or 7-Up
2 tablespoons cream, milk or half-and-half
Directions:
- Heat oven to 425 degrees. Line a baking sheet with parchment paper.
- In a mixing bowl, combine the flour, ½ cup whipping cream and soda, using a fork to stir gently until just combined. Turn out onto a lightly floured surface and knead lightly, just until the dough is no longer sticky.
- Pat dough into a 1-inch thick rectangle. Using a biscuit cutter dipped in flour, cut out scones and place onto prepared baking sheet. Pat scraps into another rectangle and cut out more scones.
- Brush tops of scones with cream or milk and bake for 12-13 minutes until they’re lightly browned and sound slightly hollow when tapped.
- Let cool for a few minutes on the tray and serve while still warm with freshly whipped cream and your favorite jam or lemon curd.
