How to make Miracle Scones

Makes 10 2-inch scones

Note: If you don’t have self-rising flour, make your own by adding 1½ teaspoons of baking powder and ¼ teaspoon salt per cup of flour.

Ingredients:

2 cups self-rising flour

½ cup whipping cream

½ cup clear soda, such as Sprite or 7-Up

2 tablespoons cream, milk or half-and-half

Directions:

  1. Heat oven to 425 degrees. Line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the flour, ½ cup whipping cream and soda, using a fork to stir gently until just combined. Turn out onto a lightly floured surface and knead lightly, just until the dough is no longer sticky.
  3. Pat dough into a 1-inch thick rectangle. Using a biscuit cutter dipped in flour, cut out scones and place onto prepared baking sheet. Pat scraps into another rectangle and cut out more scones.
  4. Brush tops of scones with cream or milk and bake for 12-13 minutes until they’re lightly browned and sound slightly hollow when tapped.
  5. Let cool for a few minutes on the tray and serve while still warm with freshly whipped cream and your favorite jam or lemon curd.
