How to make: smokey barbecue vegan jackfruit tacos
Ingredients (serves 20)
For the filling:
- 40ml pure olive oil
- 200g fine sliced onions
- 1kg Chef’s Choice green jackfruit in brine
- 600ml Lion Hickory BBQ sauce
- 100ml water
To make 20 tacos:
- 20 The Foodfellas 6-inch corn tortillas
- 300g cooked BBQ pulled jackfruit
- 200g sliced red onions
- 15g coriander sprigs
- 20 lime wedges
Prep time: 10 minutes
Cooking time: 40 minutes
Method
To cook the jackfruit:
- Heat the oil and sauté the onions until golden brown
- Add the prepared jackfruit (you need to cut the core out before cooking)
- Cook for a further 10 mins and then add ⅓rd of the Lion Hickory BBQ sauce – pull the jackfruit into shreds
- Place into an oven tray and pour over the remainder of the sauce
- Cover and place in oven at 160°C for 40mins
- Remove from the oven and stir at regular intervals – add more sauce and water if required<html><body>
- Chill and use as required
To assemble the tacos:
- Warm the cooked jackfruit and put to one side
- Warm the corn tortillas and then pile in the jackfruit
- Finish with sliced red onions, sprigs of coriander and lime wedges
- Serve with a little salsa or more of the Lion Hickory BBQ sauce on the side.
