How to Make the Best Sex on the Beach Cocktail

The last time the Sex on the Beach was cool was in '88, when Tom Cruise stood atop a bar and sang its praises in the movie Cocktail. That means it's about due for a roaring comeback, right? For a recipe that does not call for peach schnapps, we turned to Ever Bar, located in the Kimpton Everly Hotel in L.A.
Ever Bar’s Sex on the Beach, created by beverage manager Dan Rook, is an intensive build calling for steeped tea syrup, honey vinegar, peach jam, pineapple juice, and egg white. "The resulting drink is a balanced baby of multiple flavors with a coating mouthfeel from the egg white addition," says Rook.
It is complex and layered, but fresh like an ocean breeze wafting over a white sand beach at sunrise. Or something. If you're dedicated to the craft, this is how to make a Sex on the Beach cocktail that no one will knock once they give it a try.

The Cocktail
Tito's vodka
pineapple juice
crimson berry and peach tea syrup
honey vinegar
scoop peach jam
egg white
Tea Syrup
bags Lamill crimson berry tea
bags Lamill summer peach tea
simple syrup
Honey Vinegar
champagne vinegar
The Cocktail Build
- Dry shake all ingredients together, then shake with ice.
- Strain out ice, then shake again. (Tip: This is known as a "reverse dry shake.")
- Serve up with a Peychaud's bitters garnish; Ever Bar adds a design of three hearts.
Tea Syrup
- Steep tea bags (10 total) together in 32 oz. of hot water in a large container. Let sit for 1 hour.
- Pull out tea bags.
- Combine 32 oz. of tea with 32 oz. of simple syrup in a pot, stirring thoroughly until mixed.
Honey Vinegar
- Combine equal parts honey and champagne vinegar in a small saucepan. Bring to a simmer, then let cool completely.
